Get a fuel pressure gauge on there and monitor the pressure when its acting normal and then when playing up, some times a faulty fuel reg or fuel pump can cause swings in AFR like that especially seen as your running in open loop all the time but if there is some wiring problems with your harness or a sensor itself i.e ECT or IAT sensor giving a false reading then that would explain your problem also, should be easy enough to point that out with some datalogging. Good luck with it.

Wow, updating this YEARS later...

I no longer have the car, but got the issue sorted out.

Issue was caused by a faulty MAP sensor. I had received a fake Hondata map sensor, from a now-banned eBay user. After we got it replaced with a good, working one, the issues went away.

Of course, I replaced the entire wire harness, ELD, fuse box, and spent nearly $1000 in labor rates alone because of this issue; $95/hr troubleshooting adds up quick!
